    Basic: Lindy's New York Style Cheesecake

    -----CRUST-----
    1 Cup flour
    1/4 cup sugar
    1 teaspoon lemon peel -- grated
    1/2 teaspoon vanilla
    1 egg yolk
    1/4 cup butter -- softened

    -----FILLING-----
    40 ounces cream cheese -- softened
    1 cup sugar
    1/4 cup cornstarch
    2 teaspoons lemon peel
    1 teaspoon orange peel -- grated
    1/4 teaspoon vanilla
    5 large egg -- room temp
    2 large yolks -- room temp
    1/3 cup heavy cream

    -----TOPPING------
    2 tablespoons sugar
    4 teaspoons cornstarch
    17 ounces pineapple -- crushed
    2 tablespoons lemon juice
    2 drops yellow food coloring -- optional

    Recipe

    Crust: Combine flour, sugar, lemon peel and vanilla. Make well in center. Blend in yolk and butter. Mix with fingers until smooth. Pat half of dough onto pan bottom. Bake 6-8 minutes at 400ºF. Pat rest of dough 2 inches up pan sides. Increase heat to 450ºF and place a pan of water in bottom of the oven.

    Filling: Beat cheese until light. Add sugar and beat again. Add eggs one at a time, beating after each on LOW speed. Add remaining ingredients, mix well. Pour into pan and bake 15 minutes. Lower heat to 250ºF and bake 1 hour or so longer until firm on sides and still somewhat soft in middle. Remove from oven and run knife around edge, then loosen the rim (DO NOT remove). Cool to room temperature in a draft free place. Refrigerate overnight. Suggested topping below (any fruit will, do but this works well). Topping: Mix cornstarch and sugar well in pan. Add remaining ingredients and cook over medium heat until bubbly and thick. Cool. Pour over cooled cheesecake.
