Orange: Orange Marmalade Glazed Cheesecake

1 cup graham cracker crumbs
3 tablespoons sugar + 1 cup
2 teaspoons unsalted butter, melted
16 ounces lowfat cottage cheese
8 ounces light cream cheese
6 tablespoons flour
1/4 teaspoon salt
1 egg + 3 egg whites
1 tablespoon fresh lemon juice
1 tablespoon grated lemon rind
2 teaspoons vanilla
1/2 cup orange marmalade
1 seedless orange, peel and thin slice
Recipe
Preheat oven to 325ºF. In a small bowl, combine cracker crumbs, 3 tbl. sugar and butter. Press mixture into an 8" springform pan. In the food processor, process the cottage cheese and cream cheese until smooth. Add the flour, salt, egg, egg whites, lemon juice and rind, vanilla and remaining 1 cup of sugar. Process just until smooth. Pour into the prepared pan and place pan on a baking sheet.
Bake the cheesecake for 55 minutes. Turn off the oven and let the cheesecake cook in the oven with the door opened slightly for 1 hour. Cool the cheesecake completely on a rack. Unlatch the side of the pan and use a small knife to carefully separate the cheesecake from the pan, then reclose the pan sides with the cheesecake still resting inside the pan.
Melt the marmalade in a small pan over medium low heat. Let it cool to lukewarm, then brush about half the marmalade over the cooled cheesecake. Arrange the orange slices over the marmalade, then brush the orange slices with the remaining marmalade. Refrigerate, covered, until the glaze is set, at least 1 hour and up to 24 hours. To serve, remove the sides of the pan and cut the cheesecake into wedges. Serves 12.
