Sour Cream: Sinless Sour Cream Cheesecake

List of Ingredients
1 Envelope knox unflavored gelatin
1/4 c Cold water
3/4 c Boiling water
Sweetener equal to 1/2 cup sugar
1 pk (8 oz.) lite cream cheese -softened
1 Container (8 oz.) lite sour cream
1 t Vanilla extract
Fresh fruit optional
1 Graham cracker crust
Recipe
Have all ingredients at room temperature. In blender, sprinkle gelatin over cold water. Let stand 2 minutes. Add boiling water and process at slow speed until completely dissolved. Add remaining ingredients, process until blended. Pour into 8 or 9 inch inch pie crust prepared with 3/4 cup graham cracker crumbs and 2 tbs. melted diet margarine. Chill until firm. Garnish with fresh fruit if desired.
Makes 10 servings..
Per serving with crust: calories 120, protein 4 gms., carbs. 15 grams (using sugar), total fat - 5 g (unsat. fat 2 g), sodium 158 g, cholesterol 12 mg.
