Mini: Toffee Cheesecake Cups

20 vanilla wafers
3 8 ounce pack each, cream cheese softened
3/4 cup sugar
3 eggs
1 teaspoon vanilla
1 package english toffee bits
Recipe
Line muffin tins with paper baking cups; place a vanilla wafer on bottom of each cup. In large mixing bowl, beat cream cheese and sugar until smooth. Beat in eggs and vanilla just until blended. Gently stir in 1 1/2 c. toffee bits into batter and pour into prepared cups about 1/4" from top. Bake at 350ºF for 20-25 minutes or until almost set. Remove from heat and immediately sprinkle about 1/2 tsp bits onto each cup. Cool completely on wire rack. Cover and refrigerate. Yield: 20 mini cheesecakes.
