    Ultimate Pineapple Cheesecake

    1 cup graham cracker crumbs
    2 tablespoons sugar
    1/4 cup butter or margarine, melted
    3 8-ounce packages cream cheese, softened
    1 cup sugar
    4 eggs
    1 tablespoon vanilla extract
    1/4 teaspoon salt
    Pineapple Glaze (below)

    Preheat oven to 350°F.  Grease a 9-inch springform pan with non-stick vegetable spray.
    In a medium bowl, combine cracker crumbs, sugar, and butter; mix well.  Press in bottom of prepared springform pan. In a large mixing bowl, beat cream cheese until fluffy.  Gradually  beat in sugar.  Add eggs, one at a time, beating well after each addition.  Stir in vanilla and salt.  Pour into prepared crust. Bake for 50 minutes.  Cool to room temperature on a wire rack.

    PINEAPPLE GLAZE
    1 8-3/4 ounce can crushed pineapple
    1/2 cup sugar
    3 tablespoons cornstarch
    1 egg, lightly beaten
    1 tablespoon butter or margarine
    Drain pineapple, reserving juice.  Add water to juice to make 1/2 cup.  Add sugar and cornstarch to juice, stirring until smooth.  Cook over low heat until thick.  Add egg and butter; cook for 2 minutes.  Cool; spread over cheesecake.  Refrigerate at least 3 hours before serving.
