Recipe Introduction
"One of my inventions that was actually created by making a mistake. These are very good. They won't really kill you, but after eating a couple of them you'll feel like you went to Heaven!"
List of Ingredients
1 cup Butter - (2 sticks) at room temperature
1/2 cup Vegetable Oil
1 cup Sugar
1 1/2 cup Brown Sugar
2 Eggs - add one at a time
2 tsp. vanilla
2 1/2 cup Flour
1 tsp. Baking Powder
1/2 tsp. Salt
1 cup Semi-sweet Chocolate Chips
4 English Toffee Bars - coarsely chopped (Heath or Skor)
3/4 cup Walnuts - coarsley chopped
1 cup Flaked Coconut
3/4 cup Quick Cooking Oatmeal - uncookedRecipe
Heat oven to 350 degrees F. Lightly grease cookie sheets. In a large bowl cream together butter, oil, sugars. Add the eggs one at a time. Add vanilla - mix well. In a bowl mix together flour, baking powder and salt. Mix these dry indgredients into the wet ingredients. Add the chocolate chips, toffee bars,walnuts, coconut and oatmeal. Refridgerate for 15 minutes. Use small ice cream scoop to drop cookies onto lightly greased sheets 2" apart. Cook for 12-14 minutes at 350 degrees F.
YEILD: 7 dozen cookies
For a gift idea..."Cookie in a Jar". Using all of the dry ingredients only, cut the recipe in half and put into a large mason jar. It looks nice if you layer the coconut, chocolate chips, walnuts, oatmeal and toffee bars on top of the other dry ingredients. Include the ingredients the lucky recipeint will have to add. Be sure to your the halved amount of eggs (1), vanilla (1 tsp.), butter (1/2 cup) and oil( 1/4 cup)and the required baking instructions.
