Oatmeal: Bake Sale Oatmeal Raisin Cookies

1 cup unsalted butter, room temperature
1 cup dark brown sugar
1/2 cup sugar
2 eggs, room temperature
1 tablespoon vanilla
1 tablespoon water
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
2 1/2 cups rolled oats, ground to a powder
Recipe
Preheat the oven to 375ºF. Lightly grease a cookie sheet. Place the butter and sugars in the bowl of a mixer fitted with a paddle and mix until smooth. Scrape down the sides of the bowl, add the eggs, vanilla and water, and mix until just combined, being careful not to overbeat. Scrape down the sides of the bowl, add the flour, baking soda, salt and oats, and mix until everything is well incorporated. Add up to 2 cups of optional ingredients, by hand, if desired.
Place tablespoonfuls on prepared cookie sheet and transfer to the oven. Bake until brown on the edges and soft in the middle, about 12-13 minutes. Do not overbake. For crisper cookies, cool on the cookie sheet. For softer cookies, cool 2 minutes and then remove to a rack. Cool cookie sheets between batches. Makes 5 dozen.
OPTIONS: Add any of the following, but not more than 2 cups total: 2 cups semisweet or white or milk chocolate chips, 1 cup butterscotch chips, 1 cup toasted nuts (coarse chopped), 1 cup sweetened shredded coconut, 1 cup raisins and 1 tsp. ground cinnamon, 1 cup dried cranberries and 1 cup white chocolate chunks.
