Butter: Lemon Butter Cookies 2

1/2 c Granulated sugar
1/2 c Powdered sugar
3/4 c Butter or margarine, softened
1/4 c Oil
1 tb Grated lemon peel
1 tb Lemon juice
1 Egg
2 1/2 c All-purpose flour
1/2 ts Cream of tartar
1/2 ts Baking soda
1/4 ts Salt

Beat the sugars, butter and oil in a large bowl until light and fluffy. Add the lemon peel, lemon juice and egg and blend well. Stir in the flour, cream of tartar, baking soda and salt; mix well. Cover with plastic wrap and refrigerate for 1 hour for easier handling.
Heat the oven to 350ºF. Shape the dough into 1-inch balls and roll in the decorator sugar. Place the balls 2 inches apart on ungreased cookie sheets. Bake for 7 to 12 minutes or until set. Remove immediately from the cookie sheets.
