3 eggs
2 cups sugar
1 cup melted butter
4 cups flour
1 teaspoon salt
1 teaspoon baking soda

Mix together flour, salt and baking soda; set aside. In an electric mixer bowl, beat eggs until fluffy. Slowly add sugar and continue beating. Turn mixer to low and pour in melted butter. Continue beating on medium speed until well blended. On low speed, add dry ingredients. Mix only until all ingredients are incorporated. Chill overnight. Grease cookie sheets lightly with shortening. Turn oven to 350ºF to preheat. Roll out dough to about 1/8 inch thickness. Use assorted cutters. Place on cookie sheet. Sprinkle with colored sugar. Bake 8-10 minutes. Cookies will puff up while baking, then settle down and turn golden brown when done. Remove from cookie sheets immediately and cool on wire racks.
