Butterscotch Pillow Cookies

5 tablespoons margarine
2 tablespoons water
1 cup packed dark brown sugar
2 egg whites
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cp rice krispies®
1/2 cup + 2 tbl. powdered sugarRecipe
Preheat oven to 350°F. Line a baking sheet with parchment paper or coat with nonstick spray and set aside. Cream margarine, water and brown sugar until smooth. Add whites and vanilla and mix until smooth. Add flour, salt, baking powder and baking soda and mix until smooth. Fold in Rice Krispies. Place batter in freezer for 15 to 20 minutes until firm for easier handling. Place the confectioners' sugar in a small bowl and set aside. Form the cookies into rounded 1/2 teaspoon size and roll them in confectioners' sugar to coat. Place onto baking sheet and slightly flatten. Bake 12 minutes.
