Chinese Almond Cookies

2 cups almonds
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, softened
1/3 cup sugar
1 tablespoon gin
1 teaspoon almond extractRecipe
Preheat the oven to 350ºF. Cover 2 cookie sheets with parchment paper. Set aside 36 almonds to decorate cookies. Very finely chop remaining almonds (by hand or in a food processor). In a medium bowl, sift together chopped almonds, flour, baking powder and salt; set aside. In a large bowl, cream butter and sugar until light and fluffy; fold in flour mixture until well-blended. Stir in gin (vodka or water may be substituted) and almond extract, beat until thoroughly combined. Form dough into 36 balls and place a whole almond in center of each ball. Bake for 20 minutes, or until golden brown.
