Meringue: Chocolate Chip Meringues

List of Ingredients

2 egg whites
1/4 teaspoon salt
1/4 teaspoon vanilla
1 cup powdered sugar
2 cups corn flakes
1 cup shredded coconut meat
1 cup semisweet chocolate chips


Recipe

Beat egg whites, salt and vanilla until soft peaks form. Gradually add confectioners sugar, beating until peaks are stiff. Fold in corn flakes, coconut and 2/3 cup chocolate bits. Drop by teaspoonfuls on well greased cookies sheet. Top each cookie with a few chocolate bits. Bake in slow oven 300ºF for 20 minutes until slightly brown. Cool slightly before removing from pan. Makes about 2 dozen.
