Chocolate Covered Cherry Cookies

1 1/2 cups flour
1/2 cup cocoa
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 cup sugar
1/2 cup butter softened
1 egg
1 1/2 teaspoons vanilla
12 ounces maraschino cherries, no stems
1 cup chocolate chips
1/2 cup sweetened condensed milk
3 teaspoons maraschino cherry juice
Recipe
Drain cherries well, reserving juice. Sift together flour, cocoa, salt, baking powder & baking soda. In a large bowl, cream together butter & sugar until light & fluffy. Add egg & vanilla, continue beating until well mixed. Slowly add dry ingredients, beating until well combined (dough will be stiff). Shape dough into 1" balls. Place balls of dough onto ungreased cookie sheets. Using thumb (or handle end of wooden spoon), make indentation in middle of each cookie, large enough to hold cherry.
Place drained cherry in each indentation. In small saucepan, combine chocolate chips & sweetened condensed milk. Stir over low heat until chocolate is melted. Remove from heat & stir in about 3 tsp of reserved cherry juice, mixing well. Spoon 1 tsp hot frosting on each cookie, completely covering cherry. Bake cookies in 350ºF oven 10 minutes. They'll not look done, but will be. Leave on cookies sheets few minutes before removing or will fall apart. Cool completely on racks. Yield: 32 cookies.
