3/4 cup butter, softened
3/4 cup sugar
1 egg
1 1/2 teaspoons vanilla
2 1/4 cups flour, sifted
1/2 teaspoon salt
6 ounces chocolate chips
COATING:
6 ounces semisweet chocolate chips
2 tablespoons butter
1 1/2 cups ground walnutsRecipe
Line cookie sheets with parchment and set aside. In a large bowl of an electric mixer, beat butter, sugar, egg and vanilla until well-mixed, about 2 minutes. In a separate bowl, sift flour and salt. Blend flour into butter mixture. Stir in chocolate chips by hand. On a lightly floured surface, shape dough, by the heaping teaspoonful, into logs about 2 inches long and 1/2 inch wide. Place on parchment-lined cookie sheets and bake in a preheated 350ºF oven until cookies are set and lightly browned on bottom edge, 12 to 15 minutes. (The cookies will look quite pale on the top side.) Remove pans from oven and place on wire racks, allowing cookies to cool completely on the cookie sheets.
Prepare coating: Melt chocolate and butter in a double boiler or in a large glass bowl or measuring cup by microwaving and stirring every 15 to 25 seconds until smooth. If mixture seems too thick for dipping, add a little melted butter and stir until smooth. Place ground nuts in a small bowl. Dip one end of each cookie log into chocolate, scraping the excess from the back (flat side) of the cookie onto the side of the measuring cup or bowl. Roll or dip chocolate-coated ends in nuts. Place on waxed paper until set. Store covered in a single layer. Makes 40 cookies.
