Chocolate Chip: Chunky Chocolate Oatmeal Cookies

1 3/4 cups unbleached flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
2/3 cup fructose or table sugar
3/4 cup brown sugar
1/2 cup egg whites or egg substitute
1 teaspoon pure vanilla extract
1 1/2 cups quick-cooking oats
1/2 cup chocolate chips
1/2 cup chopped milk chocolate bar
Recipe
Preheat oven to 375ºF. Into a small bowl, sift together flour, baking powder, baking soda and salt; set aside. In a large bowl, beat butter and sugars with an electric mixer until light and creamy. Add egg whites and vanilla; beat until smooth. Add flour mixture to butter mixture and stir until well blended. Stir in oats and chocolate. Drop by teaspoonfuls about 1 inch apart onto an ungreased baking sheet. Bake for 12-15 minutes or until set. Cool slightly on baking sheet, then remove to wire rack to cool completely. Makes about 40 cookies.
