Coconut Oat Cookies

1/2 cup shortening
1/2 cup sugar
1 egg
1 cup quick-cooking oats
1 cup flour
3 1/2 ounce instant coconut cream pudding mix
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon saltRecipe
In a mixing bowl, cream shortening and sugar. Add the egg; mix well. Combine the remaining ingredients; add to the creamed mixture and mix well. Roll into 1" balls. Place on greased baking sheets. Flatten with a fork. Bake at 350ºF for 10-12 minutes or until edges begin to brown. Remove to wire racks to cool. Yield: 2 1/2 dozen
