3/4 cup whole wheat pastry flour
3/4 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ground numeg
1 1/2 cups old fashioned rolled oats
1 cup chopped walnuts or raisins or dates
6 ounces silken tofu
1/4 cup water
1 cup light brown sugar, packed
2 tablespoons vanilla
Recipe
Preheat oven to 375ºF. Sift together the flours, baking powder,, salt and spices. Stir in the oats and the fruit/nut mix. In a separate bowl, mash the tofu with the back of a fork or wooden spoon and stir in the remaining ingredients. Using a rubber spatula, fold the wet ingredients into the dry ones, combining thoroughly. Drop the batter by tablespoons onto an ungreased cookie sheet and press each down slightly with a fork. Bake the cookies about 10 minutes or until the edges just begin to brown. Makes 48.
