3 egg whites
1 pinch salt
3/4 cup sugar
2 teaspoons vanilla
2 teaspoons vinegar

Preheat the oven to 225ºF. Line a cookie sheet with wax paper. Beat the egg whites and salt until stiff. Fold in the sugar, vanilla, and vinegar. Pipe or drop in 1- or 2-inch rounds, preferably pointed, onto the prepared cookie sheet. Bake until firm, 1 to 2 hours. Makes 8 large or 24 small cookies.
