Meringue: Hard Meringue Cookies

4 egg whites, room temperature
1/4 teaspoon salt
1/4 teaspoon cream of tartar
1 cup sugar
1/2 teaspoon vanilla
1 cup chopped nuts, optional
1 teaspoon finely grated lemon rind, optional
other extract flavorings, optional
Recipe
Beat egg whites with salt and cream of tartar. When egg whites from soft peaks, very gradually add the sugar. Fold in the flavoring and nuts. Drop by spoonfuls on cookie sheet dusted with corn starch. Bake 1 hour at 250ºF. This mixture can be spread into 3" or 8" pie shell shape, baked then filled with cooked pudding or other filling.
