    Peanut Butter: Healthy Peanut Butter Cookies

    List of Ingredients

    1 cup whole wheat flour
    1 1/2 teaspoons wheat gluten
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 1/2 tablespoons safflower margarine, melted
    3/4 cup natural peanut butter
    1/4 cup brown rice syrup
    1/4 cup apple juice concentrate
    1/4 cup sucant or other powder sweetener
    1 1/2 tablespoons mashed soft silken tofu
    1/2 teaspoon vanilla
    1/8 cup soymilk

    Recipe

    Mix flour, optional gluten, baking powder and salt in a separate bowl. Mix all the rest of the ingredients well in another bowl. Mix the dry mixture into the wet one. Let dough rest for about 1/2 hour. Preheat oven to 350ºF. Divide into 12 pieces, roll each piece into a ball and flatten them all a little with a fork (If you leave them thick, they will be chewier, thin -crunchier). Bake cookies for 15-20 minutes, until browned. You could also use almond butter, cashew butter, etc. in place of peanut butter.
