    3/4 cup flour
    3/4 teaspoon salt
    8 tablespoons unsalted butter, room temp
    1 cup sugar
    1/2 teaspoon vanilla
    4 egg whites, lightly beaten (1/2 c.)
    4 ounces bittersweet chocolate

    Recipe



    Preheat oven to 375ºF. Sift flour and salt together. Beat butter just until fluffy, then put mixer on medium low and gradually add sugar and then the vanilla. Scrape bowl and then on low gradually add egg whites. MIx until blended; add flour mixture, stirring by hand. Drop batter onto baking sheets and flatten to 1/8" thickness, forming strips 2 1/2 inches long. Bake until crisp to touch in center and rich golden around edges, 14-16 minutes. Watch carefully as they can overbake within seconds. Cool completely on baking sheets. Prepare filling by melting chocolate in microwave or over double boiler; cool to spreading consistency. To make cookies, spread each bottom half with teaspoon of chocolate and then top with other cookie. Allow to set completely before eating. Makes 24 sandwiches. Store airtight in freezer up to 2 weeks.
