3/4 cup butter, softened
3 tablespoons sugar
1 1/4 cups flour
1/2 cup cornstarch
1 teaspoon fresh grated lemon peel
2 tablespoons fresh lemon juice
FROSTING:
1 cup powdered sugar
1/4 cup butter, softened
1 teaspoon grated lemon rind
2 teaspoons fresh lemon juiceRecipe
In a large mixing bowl, combine butter and sugar. Beat until light and fluffy. Add flour, cornstarch, lemon peel, and lemon juice. Beat until a soft dough forms. Shape dough into 1 1/2 inch diameter log. Wrap in plastic wrap and chill for 1-2 hours, or until firm. Cut logs into 1/4 inch slices. Place on ungreased cookie sheet. Bake for 8-10 minutes at 350ºF, or until lightly browned. Cool completely. Combine frosting ingredients. Spread evenly on cookies. Let dry completely before storing in an airtight container.
