Sugar: More Sugar Cookies (2 recipes)

List of Ingredients

4 cups flour
3/4 teaspoon cream of tartar
1 teaspoon cinnamon
1 teaspoon salt
1 cup butter
2 cups packed brown sugar
3 eggs
1/2 cup sugar


Recipe

Sift together flour, cream of tartar, cinnamon and salt. Cream together butter and brown sugar. Add 2 eggs and 1 egg yolk (reserve white). Beat until light and fluffy. Gradually add flour mixture, beating well after each addition. Wrap dough in wax paper and chill several hours. Roll out to 1/8" thick and cut with cookie cutters. Brush tops with lightly beaten egg white. Sprinkle with colored sugar. Bake on greased cookie sheets for 8-10 minutes at 400ºF.


Sugar Cookies II
1 1/3 cup shortening
1 1/2 cup sugar
2 teaspoons vanilla
2 eggs
1/4 cup milk
4 cups flour
3 teaspoons baking powder
1/2 teaspoon salt

Cream shortening, sugar and vanilla. Add eggs and beat well. Stir in milk. Sift dry ingredients and blend into creamed mixture. Chill 1-2 hours. Roll to 1/8" thick and cut with cookie cutters. Bake on greased cookie sheet 6 minute at 400ºF
