Oatmeal: Oatmeal Cookies

1 1/4 cups margarine
1 teaspoon baking soda
3/4 cup firmly packed brown sugar
1 teaspoon salt
1/2 cup granulated sugar
1 teaspoon cinnamon
1 egg
1/4 teaspoon nutmeg
1 teaspoon vanilla
3 cups oatmeal
1 1/2 cups flour
Recipe
Heat oven to 375ºF. Beat together margarine and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, soda, salt, and spices. Add to margarine mixture, mixing well. Stir in oats. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 8-9 minutes. for a chewy cookie; 10-11 minutes. for a crisp cookie. Cool 1 minute on cookie sheet; remove to a wire cooling rack. Store in tightly covered container.
