Peanut Butter Oatmeal Cookies

3/4 cup butter flavor shortening
1 cup peanut butter
1 1/2 cups firmly packed brown sugar
1/2 cup water
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
3 cups quick oatsRecipe
Beat shortening, peanut butter and brown sugar until creamy. Beat in water, egg and vanilla. Add combined dry ingredients. Mix well and then cover and chill for 2 hours. Heat oven to 350ºF. Shape into 1" balls. Place on ungreased cookie sheet and flatten with tines of fork dipped in sugar to form crisscross pattern. Bake for 9-11 minutes or until edges are golden brown. Cool for 1 minutes on cookie sheet. Cool completely and store tightly covered. Makes 7 dozen
