Peanut Butter: Orphans Peanut Butter Cookies

Recipe Introduction
"My mother was raised in an orphanage most of her life. While there, she worked in the kitchen and this is the peanut butter cookie recipe that she always used there. It has been reduced several times, (because it made very large batches) and butter flavored Crisco has been substituted for the lard. (Although I prefer the lard as I like a crisp cookie.) She brought the recipe with her when she left there in 1928. The recipe has to be over 100 years old."
2-1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
Mix the above ingredients and set aside.
1/2 cup butter
1/2 cup lard, can use butter flavored crisco sticks
1 cup peanut butter
Cream the above ingredients together.
1-3/4 cups dark brown sugar
1/4 cup white sugar
Add these to above 3 items.
2 eggs
2 teaspoons vanilla, optional
Add the above and beat well.
Stir in flour mixture. Press batter into wax paper lined 8x8 baking pan and refrigerate until firm. Cut into 4 bars. Slice 1/4 thick and put on ungreased sheet. Press with wet fork. Bake at 375? for 9-11 minutes.
