Penuche Coconut Cookies

1 c Shortening
2 c Flour (sifted)
2 c Brown sugar (packed)
1/2 ts Salt
1 t Vanilla
1 t Soda
2 Eggs
2 c Coconut Recipe
Cream shortening and sugar until thoroughly blended. Mix in vanilla. Add eggs, one at a time, beating well after each addition. Sift together flour, salt and soda. Add and blend thoroughly. Stir in coconut. Drop by teaspoonfuls onto a cookie sheet. Bake at 375-degrees 8 to 10 minutes. Yield: 8 dozen 2 inch cookies.
