    Shortbread: Scottish Shortbread Cookies

    List of Ingredients

    1 cup butter -- softened
    2 1/2 cups flour
    1/2 cup sugar

    Recipe

    Beat butter and sugar till smooth. Gradually work in flour. Shape into ball, flatten. Wrap in waxed paper. Refrigerate 30 minutes. Heat oven to 300ºF. Roll dough out on lightly floured surface to 1/4" thick. Cut into 3" rounds. Transfer with a wide spatula to cookie sheet, 1" apart. Bake for 30 minutes or pale golden brown. Remove, cool completely.
