Sugar: Big Soft Sugar Cookies

"This recipe makes a small batch. It is a puffy cookie, tasty and not too sweet. About right for a small family to eat in one batch of an evening. It is better to make 2 separate batches, if you need more, as something funny happens with the proportions and you wind up with flat round sweet biscuit shaped hockey pucks. "
List of Ingredients
1/2 cup sugar
1-3/4 cups flour
1/2 cup soft shortening or butter
1/4 teaspoon salt
1 egg, beaten
1/2 teaspoon soda
1/4 cup milk
2 teaspoons baking powder
1/2 teaspoon lemon extractRecipe
Beat together the sugar, shortening, and egg until fluffy. Add the sifted dry ingredients alternately with milk and extract, beginning and ending with dry ingredients. Mix thoroughly. Chill for 45 minutes. To make cookies, you can either roll them on a lightly floured board and cut with a large cutter or form good sized balls and flatter them with a glass bottom dipped in sugar. Make them not less than 3/8 inches thick. Bake at 400 degrees for about 5 minutes. These cookies should not be very brown.
