Butter: Ultimate Butter Cookies *

Recipe Introduction
I've been told these taste like shortbread... they make a delicate cookie that melts in your mouth. I always double the batch.
List of Ingredients
2 sticks unsalted butter, room temperature
(do NOT substitute for the butter)
1/2 cup sugar
1/2 teaspoon salt
1 large egg yolks
2 1/4 cups flour
Recipe
In a large bowl of an electric mixer, cream the butter with the sugar, salt and egg yolk until smooth. Blend in the flour until the mixture blends into a smooth dough. Wrap the dough in a plastic bag and refrigerate 1/2 hour or up to two days. Preheat the oven to 350ºF. Roll out the dough on a lightly-floured surface to 1/8-inch thickness. Cut into desired shapes using cookie cutters. Place on lightly-greased cookie sheets. Sprinkle with decorating sugar. Bake for 12 to 15 minutes, until edges are just starting to turn golden brown.
When I haven't wanted to bother with rolling the dough out, I've also at times simply dropped dough by teaspoonfuls onto cookie sheets, and then flattened the balls of dough slightly with the bottom of a glass. You can also sprinkle the cookies with colored sugar or cinnamon sugar as desired.
