Chocolate Tofu Cupcakes

2 cups flour
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 cup butter, softened
1 cup packed light brown sugar
1/2 cup mashed tofu
1 cup nonfat cottage cheese, drained
1 teaspoon pure vanilla extract
1/2 cup chocolate chips
Recipe
Preheat oven to 350ºF. Place paper liners into 118 muffin tins. Into a small bowl, sift together flour, cocoa and baking powder; set aside. In a large bowl, beat butter, sugar, tofu, cottage cheese and vanilla until smooth. Add flour mixture to tofu mixture and beat until well combined. Stir in chocolate chips. Fill paper-lined cups half full. Bake for 15 minutes or until a wooden pick inserted into centers comes out clean. Cool on wire racks. Makes 18.
