Macaroon Filled Chocolate Cupcakes

List of Ingredients
1 cup fat-free ricotta cheese
1 1/4 cups sugar
3 egg whites
1/3 cup flaked coconut
1 teaspoon coconut extract
1 1/4 cups flour
1/3 cup unsweetened cocoa
1/2 teaspoon baking soda
3/4 cup buttermilk
1/3 cup unsweetened applesauce
1 teaspoon vanilla Recipe
Heat oven to 350ºF. Coat 18 muffin cups with cooking spray. Beat ricotta, 1/4 cup sugar and 1 egg white in
a bowl until smooth.
Stir in coconut and extract. In another bowl, whisk flour, cocoa, soda, and remaining 1 cup sugar. In another bowl, whisk buttermilk, applesauce, vanilla and 2 remaining egg whites; mix in flour mixture.
Divide half of the batter evenly among muffin cups. Spoon 1 tbl. of ricotta mixture into center of each. Top with
remaining batter. Bake until a toothpick inserted in center of muffin comes out clean, 25-30 min. Cool in pans on wire rack 5 min. Remove cupcakes from pan; cool on wire rack. Makes 18 cupcakes
