FRITTERS:
1 cup water
4 ounces unsalted butter
1/2 cup sugar
1 pinch salt
2 cups flour
1/2 cup cocoa
2 teaspoons cinnamon
4 eggs
peanut oil for frying
1 cup powdered sugar for "dusting"
FUDGE SAUCE:
1 cup heavy cream
6 tablespoons unsalted butter
2/3 cup sugar
2/3 cup brown sugar
1 pinch salt
1 cup dutch cocoa powder, siftedRecipe
Combine water, butter, sugar and salt in a saucepan and bring to a boil. Combine flour, cocoa, and cinnamon in a bowl and add all at once to boiling mixture. Stir vigorously with a wooden spoon or rubber spatula until a soft ball of dough is formed in the saucepan. Remove dough from heat and place in a mixing bowl Use the paddle attachment for the electric mixer (you can do this by hand) on low speed and begin to mix the dough. Add the four eggs one at a time, mixing well after each addition. The dough will be soft and shiny (it should not be runny, if it is , keep mixing). Keep dough refrigerated until ready to fry.
FUDGE SAUCE: Place cream, butter,salt and both sugars in a saucepan. Heat and stir until butter melts and mixture simmers for three minutes. Remove from heat and add the sifted cocoa. Keep the fudge sauce warm . If sauce becomes too thick, loosen with a little hot water or hot coffee.
MAKE FRITTERS: Heat oil to frying temperature - about 375ºF. Drop the fritter dough by the spoonful carefully into the oil. Fry about three minutes. Fritters will puff up to double in size. Drain fritters and serve hot. Fritters can be held for a short time in warm oven. To serve: place about three tablespoons of fudge sauce on each dessert plate and two or three fritters on top of sauce. Dust each fritter with the cinnamon-sugar (use a shaker or fine strainer). Place a small scoop of quality vanilla ice cream in the center and garnish with raspberries.
