1 envelope unflavored gelatin
1/4 cup cold water
2 cups cherry lowfat yogurt (18 oz)
1 1/2 cups frozen cherries, partially thawed
1/4 cup sugarRecipe
Sprinkle gelatin on cold water in 1quart saucepan to soften; heat over low heat, stirring constantly, until gelatin is dissolved. Place yogurt, cherries and sugar in blender. cover and b lend onhigh speed 10-15 seconds or until smooth. Add gelatin mixture. Cover and blend 5 seconds. Pour into 13x9 inch baking dish. Freeze uncovered about 1 hour or until partially frozen. Beat cherry mixture in chilled large bowl on low speed about 30 seconds, or until smooth and airy but not completely thawed. Do not overbeat (mixture will contain some ice crystals). Return cherry mixture to pan. Cover and freeze 1-2 hours or until consistency of sherbet. Serves 8.
