    PASTA:
    1 3/4 cups flour
    1/8 teaspoon salt
    3 tablespoons unsweetened cocoa
    3 eggs
    2 teaspoons oil

    CREAM FILLING:
    4 cups whole ricotta cheese
    2 cups heavy cream
    6 tablespoons sugar
    1 tablespoon orange zest
    2 tablespoons grand marnier
    1/8 teaspoon salt

    CHOCOLATE FILLING:
    12 ounces bittersweet chocolate, chopped

    Combine the flour, cocoa & salt in a bowl; make well in the center. Put eggs & oil in well and mix with a fork to form a stiff dough. Knead the dough until smooth & shiny, 15 minutes or so; adding more flour as necessary to keep dough from being sticky. Put back in bowl, cover with plastic & let rest for 30 minutes. Roll dough by hand or use pasta machine and cut into eight 4 1/2"x11" strips. Cook in large pot of salted boiling water for 30 seconds after water returns to a boil. Quickly cool noodles in cold water bath to stop cooking. Let drain on towel in single layer.

    Combine all cream filling ingredients and mix well . To assemble, oil a 8"x11"x2" pan well. Put layer of noodles in pan, then cream filling, then chocolate filling, repeat ending with a cream layer. Bake in a preheated 425ºF oven for 25 minutes. Top should be lightly browning. Remove from oven let set for 10 minutes. Serve warm.
