    2 1/2 cups flour
    1 1/2 teaspoons baking soda
    1 1/4 teaspoons ground ginger
    1 teaspoon ground cinnamon
    1/2 teaspoon allspice
    1/4 teaspoon nutmeg
    1/2 teaspoon salt
    3/4 cup butter, softened
    1/2 cup sugar
    1 egg
    1 cup molasses
    3 cups hot water
    3/4 cup packed brown sugar
    vanilla ice cream or whipped cream

    Preheat oven to 350ºF. Blend together flour, soda, spices and salt; set aside. Cream 1/2 cup of the butter and the granulated sugar; add egg and beat until well combined. Add flour mixture alternately with molasses and 1 cup of the hot water. Pour into 13x9-inch pan. Sprinkle top with brown sugar. Combine remaining butter and hot water and mix well. Pour over top of batter. DO NOT STIR. Bake at 350ºF for 40 to 55 minutes. (Cake will crack on top.) Serve warm, spooned into dessert dishes with ice cream or whipped cream. Makes 8 to 12 servings.
