    Crispy Angel Hair with Honey Walnuts

    1/2 pound angel hair pasta
    1/2 cup butter
    1 1/2 cups mixed nuts (walnuts, and pistachios)
    1/2 cup sugar
    1/3 cup clear honey
    2 teaspoons lemon juice

    Recipe



    Preheat oven to 350ºF. Cook pasta in boiling salted water, then drain well. Return to pan with butter and toss to coat. Cool. Set 4 poaching rings on a baking sheet. Divide pasta into 8 mounds, then lightly press a mound of pasta evenly into each ring. Chop nuts and sprinkle half over pasta. Top each ring with mound of remaining pasta and press down well. Bake for 40-45 minutes or until golden brown.

    Meanwhile, place sugar, honey and 2/3 c. water in medium saucepan. Slowly bring to a boil, making sure all sugar is dissolved before it boils. Simmer for 10 minutes, then add lemon juice and simmer for 5 minutes more. Set aside. Carefully remove baked pasta from rings. Pour syrup over pasta and scatter remaining nuts on top. Cool completely before serving.
