    2 cups milk
    1 cup cooked rice
    1/4 cup sugar
    2 tablespoons flour
    1/4 teaspoon salt
    2 eggs, beaten
    1/2 teaspoon vanilla
    1/4 cup chopped walnuts

    TOPPING:
    1 cup powdered sugar
    1 dash salt
    1 1/2 tablespoons milk
    1 tablespoon softened butter
    1 1/2 ounces unsweetened chocolate, melted
    1/4 teaspoon vanilla

    Recipe



    Scald milk in heavy saucepan. Stir in rice. Mix sugar, flour and salt. Whisk into scalded milk. Cook, stirring over medium heat, for 5 minutes. stir small amount of hot mixture into eggs. Then stir back into saucepan. Cook stirring for 1 minute. Add vanilla. Pour into shallow, 1 1/2 quart buttered baking dish. Bake at 300ºF for 30 minutes until knife inserted comes out clean. Cool slightly. Spread with fudge topping. Sprinkle with nuts. Let stand until firm.

    FUDGE TOPPING: Beat powdered sugar, salt and milk together; stir in butter, chocolate and vanilla. Beat until blended and of spreading consistency.
