    1 pound bittersweet chocolate
    4 eggs
    1 cup butter, diced
    1 1/2 cups sugar
    1/3 cup strong coffee
    1/2 cup flour

    Recipe



    Preheat oven to 375ºF. Line a 9x13 inch baking pan with foil, allowing foil to stick out about 2" beyond sides of the pan. butter bottom and sides of the pan and foil. In a double boiler over hot water, melt the chocolate with the butter and coffee, stirring frequently until smooth; cool the mixture, stirring occasionally, for about 10 minutes.

    Using an electric mixer on high speed, beat the eggs for 30 seconds, until foamy. Gradually add the sugar and continue beating for 2 minutes, or until mixture is light and fluffy. Reduce the mixer speed to low and gradually add in the chocolate mixture, just until blended.

    Stir in the flour by hand; do not overbeat the mixture. Pour the batter into the pan and bake on center rack of oven for 28-30 minutes. They should remain slightly moist in the he center. Cool on rack for 30 minutes. Cover pan tightly and chill in refrigerator for a minimum of 6 hours. Remove cover and run knife around edge to loosen. Lift out of pan with overhanging foil; invert and peel off foil, then cut into squares.
