Tiramisu: Tira Mi Su

4 egg yolks
1/2 cup sugar
1/2 cup milk
1 pound ricotta cheese
2 ounces semisweet chocolate, grated
2 cups heavy whipping cream
1/2 cup cold strong coffee
2 tablespoons cocoa
2 tablespoons light rum
24 ladyfinger halves, 4x1x1/2"
Recipe
Beat yolks and sugar in saucepan on medium speed about 30 seconds or till well blended. Beat in milk, then heat to boiling over medium heat, stirring constantly. Reduce heat to low, then boil and stir for 1 minutes; remove from heat. Place plastic wrap directly onto milk mixture in saucepan. Refrigerate 2 hrs or till cool. Mix milk mixture, cheese and chocolate. Beat whipping cream and 2 tbl. cocoa in chilled bowl until stiff.
Mix espresso and rum. Dip half of ladyfingers in espresso mixture (do not soak). Arrange in single layer in ungreased 8x8 baking dish. Spread half of cheese mixture over ladyfingers. Spread half of whipped cream mixture over cheese mixture. Repeat with remaining ladyfingers, cheese mixture and whipped cream mixture. Cover and refrigerate at least 3 hours. Sprinkle with cocoa.
