Chocolate Coffee Ice Cream

8 ounces of chocolate (64%)
4 cups milk
1/2 cup instant espresso
1 vanilla beans split lengthwise
4 cups heavy cream
6 egg yolks
1 1/2 cups sugar
1 cup whipped cream
1/4 cup powdered sugar
Recipe
1. Melt the chocolate using a double boiler method; set aside.
2. In a heavy bottom saucepot add the milk, espresso, vanilla beans, and heavy cream. Bring to a boil.
3. In a mixing bowl combine the egg yolks and sugar and whip until smooth.
4. Temper the egg mixture with the cream. Place this mixture back onto the stove.
5. Heat until the mixture is thick enough to coat the back of a spoon without running. Do not boil. Remove from heat, whisk in the chocolate then transfer to an ice bath to chill.
6. Once chilled, place ingredients into an ice cream maker to finish.
7. Store in freezer.
8. For the garnish, whip the remaining cup of the cream and the confectioner’s sugar in a mixing bowl until firm. Place ice cream into individual cups and dollop with whipped cream.
