    Gelato: Mocha Gelato

    List of Ingredients

    6 ounces semisweet chocolate
    1/4 cup water
    2 tablespoons instant espresso coffee
    1/4 cup rum or grand marnier
    5 egg yolks
    1/2 cup sugar
    1/4 cup water
    3 cups heavy cream

    Recipe

    In saucepan, melt chocolate, water and coffee. Stir in alcohol and set aside to cool. Beat yolks til thick and cream-colored. In saucepan, combine sugar and water. Cook, stirring until sugar dissolves. Let boil, without stirring, until mix reaches 230¼F on candy thermometer. Slowly, whisk hot syrup into egg yolks and beat until cool, about 5 minutes. Add chocolate mixture to yolks, beating til just blended. Whip the cream just until slightly thickened. Fold chocolate mix into cream. Pour into an ice cream machine and process til frozen.
