    Chocolate Cream Cheese Mousse

    3 ounces semisweet chocolate
    8 ounces softened cream cheese
    3 large eggs, separated
    1 1/2 cups heavy whipping cream, chilled
    3 ounces unsweetened chocolate
    3/4 cup sugar
    1 1/2 teaspoons vanilla

    Recipe



    Melt both chocolates in top of double boiler. Mix cream cheese and 1/2 cup sugar. Add egg yolks and vanilla; mix well. Add hot chocolate and mix til smooth. In other bowl, beat cream until firm peaks form. Whip egg whites in another bowl until frothy; add remaining sugar and beat until whites form soft peaks. Whisk 1/3 of whites into chocolate to lighten it, then fold in the rest of the whites. Fold in whipped cream and mold in a 2 quart mold. Refrigerate at least 8 hours. Just before serving, prepare bourbon cream: on high beat 1 c heavy cream, 2 Tbl. sugar and 3 Tbl. bourbon until soft peaks form. Spoon out and put mousse on top.
