European Mocha Mousse

1/2 pound semisweet chocolate
1/2 cup water
5 eggs, separated
1 teaspoon instant coffee
vanilla extract
2 tablespoons powdered sugarRecipe
Melt the chocolate in a pan, over low heat, with a few tablespoons of water. Beat the egg yolks and add them to the chocolate with the instant coffee. Beat the egg whites with the powdered. sugar until thick, and then beat a few minutes more. Add the beaten egg whites to the melted chocolate and very slowly mix it in. Spoon into serving dishes.
