    1 cup seasonal fruit -- (1 to 2)
    3 cups apple juice
    3 tablespoons agar agar flakes
    1 pinch sea salt

    Recipe



    Combine everything in a saucepan and slowly bring to a boil. Lower heat and simmer for 10-15 minutes until agar agar flakes dissolve. Pour liquid into another bowl or mold to set. To speed up the setting you can put it in the fridge. After it is set, put it in the food processor and whip it into a fruit "mousse" ; can also make different kinds of different colors (Blueberry, strawberry and peach, for example) and layer them in a wine glass to serve.
