    Light-as-Clouds Orange Mousse

    2 envelopes unflavored gelatin
    2/3 cup fresh orange juice (2 medium oranges)
    1 quart milk
    grated rind of 1 orange (2 tbl.)
    1 cup sugar
    12 eggs, separated
    1/3 cup powdered sugar

    Recipe



    In small bowl, stir gelatin into orange juice and set aside. In medium saucepan, scald the milk over low heat. Remove from the heat, add gelatin mixture, orange rind, an sugar, and stir until dissolved. In medium bowl, beat egg yolks lightly. Slowly add 1 cup of the milk in steady stream, beating until well combined. Pour the mixture into the pan with the milk and beat until well blended.

    Cook over low heat stirring constantly, until lightly thickened, about 15 minutes. Do not allow to boil or custard will curdle. Pour into a large bowl, cover loosely, and chill until syrupy, about 1 hour. In medium bowl, beat egg whites to soft peaks, gradually adding the powdered sugar. Gently but thoroughly fold the whites into the orange mixture. Transfer to a glass serving bowl and chill, covered, between 12-48 hours. Serves 8.
