    2 eggs
    2 egg yolks
    2/3 cup sugar
    1 tbsp finely grated lime rind
    1/2 cup lime juice
    2 tbsp tequila
    3 ounces white chocolate chopped
    1/4 cup whipping cream

    Recipe



    In heatproof bowl over saucepan of hot not boiling water, whisk together eggs, yolks, sugar lime rind and juice and tequila; cook, whisking often, until thickened and mixture falls in ribbons when whisk is lifted about 8 minutes Remove from heat.



    Add white chocolate; stir until melted Pour into clean bowl; place plastic wrap directly on surface. Refrigerate until chilled about one hour Can make ahead up to three days!In bowl, whip cream; fold half into lime mixture. Fold in remaining whipped cream just until combined. Spoon into glasses or dessert dishes. Make ahead cover and refrigerate for up to 2 days.Makes six servings
