Walnut Pastry

1 3/4 cups flour
1/2 teaspoon baking soda
3/4 cup unsalted butter, chilled
2 eggs, separated
1 cup sour cream
1 cup sugar
1/2 cup walnuts, finely ground
1/2 teaspoon vanillaRecipe
Combine flour and bakng soda. With pastry blender or in a food processor, cut butter into flour mixture until it resembles coarse meal. Mix in 1 egg yolk and sour cream to make a soft dough. Wrap in waxed paper and refrigerate at least 2 hours. Preheat oven to 350ºF. Grease and lightly flour a 9" square pan. Combine sugar, walnuts and vanilla. Beat egg whites until stiff but not dry, and fold into nut mixture; set aside. Divide dough into 3 portions.
Roll out first piece of dough on a lightly floured surface into a 9" square and transfer to pan. Spread with half the walnut filling, leaving a 1" border. Roll out second piece of dough in same way and carefully place it on top of filling. Cover with remaining filling. Roll out last piece of dough and place on top, tucking the edges under slightly to seal. Flatten pastry to conform to sides of pan. With a sharp knife, score top of pie lightly into diamonds. Beat the remaining egg yolk and brush over pastry. Bake for 45-50 minutes, until browned. Cut into diamonds to serve.
