Apple: Apple Custard Pie 2

2 cups sour cream
14 ounces evaporated milk
1/4 cup frozen apple juice concentrate, thawed
2 egg whites
1/4 cup chopped pecans
2 teaspoons vanilla
1 teaspoon cinnamon
3 large apples
2 tablespoons butter
1/2 cup brown sugar
2 unbaked pie shells, 9 inches
GLAZE:
1/2 cup frozen apple juice concentrate, thawed
2 teaspoons cornstarch
1 teaspoon cinnamon
Recipe
Bake pie shells at 375ºF for 15 minutes. In bowl, combine sour cream, milk, apple juice, egg whites, pecans, vanilla and cinnamon. Mix until smooth, then pour into pie shells. Bake at 375ºF for 30 minutes or until custard has set. Cool. Prepare and slice apples. Saute in butter until crisp-tender, then sprinkle brown sugar over apple slices. Arrange on top of pie. To prepare glaze, combine apple juice, cornstarch and cinnamon in small saucepan. Heat over low, stirring constantly, until thick. Pour glaze over apple pie and serve. Makes 2 pies.
