6 cups granny smith apples, peeled, thin sliced -- (6 apples)
1 1/2 cups frozen apple juice concentrate -- thawed
1/4 cup quick cooking tapioca
1 teaspoon cinnamon
10 " two crust unbaked pieshell
Recipe
Combine juice concentrate, tapioca, and cinnamon; cook over medium heat until mixture comes to a boil. Add apple slices; simmer for 15 minutes. Pour into prepared unbaked pie shell. Cover with the top crust. Glaze top crust with egg white mixture (1 egg white mixed with 2 T water). Bake at 375ºF for 30 minutes, or until lightly browned.
